Behind echt-Schreckbauer is master butcher Sepp Mayer and his organic farm Schreckgut ("Oberseidl") in Bischofshofen, Gainfeldtal. Here - on a farm that is over 300 years old and at an altitude of about 1000m - he and his family breed organic cattle, organic sheep and free-range pigs. The farm butcher's shop is also located directly on the farm. This was optimised and expanded in 2022. This means that high-quality products can now be created. "Sepp" is particularly proud of the new climate-controlled rooms and the dry-aging maturation room, in which choice cuts of organic beef and free-range pork are often matured for weeks to optimise flavour and tenderness.
