The Eye of Round Steak comes from the round of beef (leg) - the back of the leg, more precisely the white round. Since it comes from an area that moves a lot, this part is lean and tends to be muscular and somewhat less tender than other steaks. But for this very reason, it is also cheaper than other steak cuts. Perfect for "Sous Vide" preparation, which makes the coarser fiber of the steak wonderfully tender.

North American beef is known worldwide for its intense flavor and tenderness, which are created by the strong marbling of the meat, i.e. the high proportion of intramuscular fat.
