In 1986, Valrhona created the world's bitterest chocolate with a cocoa content of 70%: a real challenge. Such a high cocoa content requires a complete overhaul of the process. This is the beginning of the precise selection of cocoa varieties, because with such a low sugar content, defects cannot be hidden. The cocoa varieties are selected according to their aromatic profile to create balanced blends with a unique taste. Guanaja immediately revolutionized the world of chocolate and became a true reference. The name Guanaja echoes the memory of the first cocoa beans given to Christopher Columbus when he landed on the island of Guanaja in the Caribbean on July 30, 1502.
Guanaja is a complex blend of cocoa flavor profiles typical of Trinidad, the Dominican Republic, Jamaica, Ghana, Ivory Coast and Madagascar. These profiles are combined until the constant and unique taste of GUANAJA is achieved: bitter and elegant. This blend, which has been carried out since 1986 and has never disappointed, is a true masterpiece.
