Only durum wheat grown in Italy and from organic farming is used for the pasta made from durum wheat semolina. Drying is done slowly and at low temperatures (about 12 hours for long pasta and about 8 hours for short pasta) to preserve all the nutrients and flavour content of the wheat in the pasta as well.

Therefore, only organic fertiliser is used to increase fertility and weeds are controlled by field management.
