The Kissas PDO Feta is a cheese made from a mixture of sheep's milk (85%) and goat's milk (15%), sourced from herds located near the dairy.
After the stages of milk coagulation, draining, and salting, the Feta is matured in local oak barrels. Since wood is a porous material, it ensures good ventilation during maturation and also allows the cheese to develop characteristic aromas and a slightly spicy taste.
Subsequently, the Feta is covered with brine, which ensures optimal preservation and imparts saltiness to the cheese. The slow maturation allows it to develop its flavors over time.
Matured for at least 2 months. The barrel-aged Feta was presented by Slow Food, along with other exceptional cheeses, to EU ministers as part of a campaign to support traditional quality products that are at risk of disappearing from the market.
