The Atlantic cod (Gadus morhua) is one of many cod species and is found in the cold waters of the North Atlantic, Arctic Ocean up to the North Sea/Baltic Sea. It is closely related to pollock.
Taste and Preparation:
Lean, tender and firm meat with strong, flaky segments. Mild, slightly salty taste.
The cod is the classic for Fish`n`Chips (remove skin beforehand). Baked in beer batter, the fish remains juicy and tender. The meat can also be perfectly steamed, poached or fried. If you lightly salt it 30 minutes beforehand, the segments will firm up and be easier to prepare.
