3 pieces of cheeks from organic pork, deep-frozen. Cheeks were a waste product or ended up in the head cheese just a few years ago. Nowadays, they are a delicacy and hard to get. Slowly braised, the firm collagen in the cheeks turns into buttery soft gelatine. Cooked properly, the meat melts in your mouth, a wonderful dish for the cold autumn/winter season.
The pig breeding of Schreckbauer Sepp is very special. Mainly pigs of the Duroc breed are bred, also single Mangaliza or Ibericos are among them. These original breeds have higher proportions of essential fatty acids, which is additionally supported by plenty of exercise, wallowing and cooling possibilities in the outdoor keeping. The main focus is to achieve a top marbling (intramuscular fat), which makes the meat tender and juicy. The animals on this farm enjoy real free range keeping with possibilities to wallow and to cool down in the water. A stress-free slaughtering directly on the farm is extremely important for the breeder and master butcher Sepp Mayer. This is how the unique quality of his pork is achieved, which you can see, feel and of course taste.

About the producer:
Behind echt-Schreckbauer is the master butcher Sepp Mayer and his organic farm Schreckgut („Oberseidl“) in Bischofshofener, Gainfeldtal. Here – on a 300 year old farm at about 1000m – he breeds organic cattle, organic sheep and free range pigs together with his family. The farm butchery is also located directly on the farm. This was optimized and extended in 2022. This means that high-quality products can now be created. „Sepp“ is very proud of the new climate rooms and the maturing room for dry-aging, in which choice cuts of organic beef and free range pork often mature for weeks to optimize taste and tenderness.
The animals live on the organic farm and enjoy a life in the great outdoors, which eliminates long transport routes and they can be slaughtered directly on the farm without stress. All products are created with loving and careful handwork.
