Legend has it that tagliatelle was invented in the 15th century by a chef named Zefirano, who worked in the court of the Duke of Ferrara. According to the story, Zefirano was inspired by the beauty of the Duke's wife, Lucrezia Borgia, and created the long, flat noodles to mimic her golden hair.
