Gorgonzola is particularly known for its creamy soft paste. During production, penicillinum spores are added to the milk. In the young ripening stage, the cheese wheels are pricked with needles to ensure the necessary oxygen supply for the fungi. Only in this way can the mould inside develop optimally and the Gorgonzola get the appearance and taste that has made it world-famous.
Tip: It is often used to make sauces for pasta. Try it once: Crispy Stangenzeller with Gorgonzola sauce!
