Chaff lettuce or head lettuce is one of the varieties of garden lettuce. This well-known, commonly eaten lettuce is also often called "butter lettuce". Iceberg lettuce and Batavia lettuce also belong to the butterhead lettuces. Butterhead lettuce forms an open leaf rosette from which the dense, firm head of overlapping tender, soft leaves develops. These are large-lobed, soft and juicy. The inner "heart leaves" of the head receive less light and are therefore lighter and more tender. Lettuce is relatively neutral in flavour, pleasantly mild to slightly tart, refreshing overall.

The generation-rich business, Biogemüse Hautzinger in Seewinkel, which is run as a vegetable business in the 3rd generation, has been converted to organic production since 2002.

The passion of Markus Hautzinger for nature and the production of vegetables started in his childhood. At the age of about 6, he was always the first one up in the morning to help out on the farm, which was still run by his parents at the time.

Origin

The wild lettuce is considered to be the original form of the various garden lettuces and is also widespread in our region. It originally comes from southern Europe or the Near East. In Central Europe, garden lettuce, which was already known to the Egyptians, Greeks and Romans in ancient times, was cultivated under Charlemagne (around 800). Today, lettuce is grown all over the world. It is the dominant type of lettuce in Central and Western Europe. In Europe, the main countries of cultivation are Italy, France, Spain, England, Austria, the Benelux countries and the Federal Republic of Germany. In Germany, lettuce is the most widely grown type of lettuce. It is available all year round, with home production being supported by imports from November to May.

Tips

Head lettuce can be kept for a few days in the vegetable compartment of the refrigerator. When doing so, you should spray it lightly with water and wrap it in damp (unprinted) paper.

Preparation

Head lettuce is usually eaten raw as a salad. However, it should always be prepared just before eating; this keeps it fresh and rich in vitamins. When using it, the leaves are detached from the head and washed briefly and thoroughly under cold running water. Immediately afterwards, drain the leaves and dry them with a kitchen towel or in a salad spinner. Lettuce is extremely versatile because of its relatively neutral taste. It can be served sweet or savoury and goes well with light cream and yoghurt sauces as well as with classic vinaigrettes. As a light summer dish, it belongs to every meal. Refined, it can replace a starter or dessert.
