Mangoes are the number one exotic fruit when it comes to taste, aroma, juice content and fragrance. They are elongated round to kidney-shaped with smooth, leathery skin. Mangoes come in a wide range of colours from grass green to yellow-orange and bright red, their flesh is bright yellow, tender and juicy. It encloses a narrow, flat core. Mangoes taste sweet, but at the same time also tart and spicy with an intense, delicious aroma.
Origin
The mango tree, which can reach a height of 25 metres, has been known in Southeast Asia for over 4 000 years. Today, mangoes are found almost everywhere in the tropics and are exported to us almost all year round. The main importing countries include: Brazil, Peru, South Africa, Kenya, Israel, Spain, Thailand.
Tips
Ripe mangoes yield slightly to light finger pressure. They must then be consumed quickly. Caution: Mango juice can leave very difficult to remove stains in textiles!
Preparation
Mangoes are excellent for eating fresh. To do this, simply cut past the flat core on both sides and lift the flesh out of the skin with a spoon. Mango pulp tastes great as a dessert in a wide variety of preparations, but also as an appetiser, e.g. wrapped with slices of ham or salmon.
