A little milder, but still quite hot, is the red curry paste with about 28% heat. It consists of shallots, garlic, galanga root, coriander root, lemongrass and shrimp paste. Roasted cumin seeds and green peppercorns are also usually added. The red colour comes from dried red chillies.
