Why almost? – The decaffeination process developed by Angie Hernández on the farm uses a natural solvent derived from coffee pulp and husk to gently remove caffeine. This sparked debate in 2024 when the coffee won the US Brewers Cup: In the US, it is considered decaf – in Europe, it is not, which caused some confusion. The lot comes from the high-altitude Pulpito plot, where Typica grows alongside Yellow Bourbon and Geisha. The cool climate ensures consistently high-quality coffee cherries, making this area one of the best on the farm. The beans are anaerobically fermented for 24 hours, washed, and then decaffeinated directly on the farm.
