Half Bresse Chicken from Austria - sous vide pre-cooked
With the Bresse Gauloise poulards pre-cooked using the sous-vide method, you can quickly and easily prepare a special meal for two people. The tender, already finely seasoned chicken meat offers an intense inherent flavour, combined with plenty of roasting juices.
Bresse Gauloise is considered “the queen of poultry” and is known worldwide for its excellent meat quality. This product is available frozen year-round, sous-vide, or fresh during the pre-Christmas season. Depending on customer preference, with or without giblets.
-
Regional and animal-friendly: The poulards come from the Austrian farms of Michael Puntigam and Gerhard Maier, where they were raised under species-appropriate conditions.
-
Ideal for two people: Thanks to the smaller portion size, the chickens are perfect for a dinner for two and prevent you from having to prepare too much.
-
Easy and quick to prepare: Since the poulards are already gently pre-cooked, you save time during preparation and still get a high-quality and flavourful result.
Preparation:
Remove from packaging and place in warm water for approximately 10 minutes until the gelled meat juice liquefies. Open the bag, drain the meat juice, and place the poulard on a baking tray or rack lined with baking paper. Roast in a preheated oven at approximately 220 degrees (top/bottom heat or convection) for about 15 minutes, depending on the oven.
Pro tip: For particularly crispy skin, brush the poulard with a little oil at the end and briefly gratinate under maximum top heat.
About the supplier:
Katharina and Patrick Birkl's Hendlhof in Southeast Styria places great importance on species-appropriate and respectful chicken farming. The farm primarily raises dual-purpose breeds, including the Bresse Gauloise, known for its high-quality meat.
-
Free-range farming: The chickens live in small groups and can move freely on traditional orchards, where they can feed on insects, fruits, nuts, and herbs.
-
Feeding: The animals are fed daily by hand with organic grain from Austria.
-
Long fattening period: The chickens grow for 16-20 weeks. This allows them to develop their natural character, and the meat achieves a particularly high quality.
-
Respectful handling: Katharina and Patrick personally care for the animals, from rearing to transport to the slaughterhouse. They accompany the chickens to ensure stress-free slaughter, which they consider an important part of quality control.
Packaging type:
Vacuum-packed.
Kitchen hygiene:
General hygiene note: Observe kitchen hygiene. Do not bring raw meat into contact with other foods. After preparation, clean kitchen utensils and wash hands. Heat thoroughly before consumption (min. 75°C). Maintain the cold chain.
