Maranhof Brother Rooster Bone Broth
As a farm that keeps purebred chickens for quality fresh eggs, we faced the question: How do we deal with the brother roosters of our laying hens?
On average, for every hen, a rooster also hatches, as the gender distribution in chickens is approximately 50:50. Since roosters naturally do not lay eggs, and those brother roosters of hybrid breeds optimized for high laying performance put on so little meat that they are largely uninteresting for conventional chicken meat production, these one-day-old brother rooster chicks in the conventional egg industry in Austria are killed shortly after hatching because their rearing and utilization would be uneconomical for these farms.
At Maranhof, however, we rely on classic dual-purpose breeds: The hens do not have excessively high laying performance that comes at the expense of their own health, and while the brother roosters put on enough meat, they do not grow excessively fast like broiler hybrid breeds that suffer from their much too rapid weight gain.
Our purebred brother roosters exhibit a physiological growth rate and live more than three times as long as conventional broiler hybrids and are – just like our laying hens – raised under the best possible conditions with the highest possible animal welfare standards.
While the meat of our brother roosters can be found on the menus of several Michelin-starred and gourmet restaurants, and the whole brother roosters are also available in small quantities as frozen goods via Gurkerl, the carcasses are processed into high-quality bone broth at the Englert delicatessen manufactory.
It is gently cooked over two days to transfer as many flavors and nutrients as possible from the bones into the broth.
