Our Windisch Porchetta is prepared from carefully selected pork belly, seasoned with an aromatic mixture of fennel seeds, black pepper, rosemary, and garlic. The meat is then gently cooked using the sous-vide method at 68°C for 36 hours to achieve unparalleled tenderness and juiciness. After cooking, the Porchetta is roasted in the oven, creating a perfectly crispy rind that contrasts with the tender interior. This traditional Italian dish brings authentic taste directly to your plate and invites you to indulge.

Preparation:
Warm the Porchetta in its vacuum packaging in hot water for 30 minutes, unwrap, remove the netting, and pat dry thoroughly. Place it rind-side up in a roasting dish, sprinkle the rind with about 9g of salt, and roast for 60 minutes at 200°C convection heat until crispy. The salt dries out the rind and allows it to crisp up in the oven.

Stefan Windisch GmbH, now in its 3rd generation, produces sausage and ham products according to the highest quality recipes, exclusively from regional raw materials.
Traditionally and still handcrafted, but adapted to today's nutritional knowledge regarding fat content, salt content, smoking, and excluding questionable additives such as emulsifiers, high-dose flavour enhancers, and the like, which are often used for cheap recipes.
The beef processed comes from the nearby Bucklige Welt region, lamb and veal from Styria and Carinthia, turkey from Burgenland, and Mangalica pork from Lower Austria.
The pork used comes from the strictly monitored "Animal Welfare Program" of the AMA and from special regional programs with specific feeding regulations, short transport routes, animal-friendly slaughter, circular economy of farmers, and much more.

Store chilled at +2°C to +6°C, consume as soon as possible after opening.
