Ingredients:
- 400 grams Bamboo Tree Rice Noodles 5 mm.
- 1 liter beef or chicken broth (homemade or good quality)
- 250 grams thinly sliced beef, chicken, or tofu
- 1 piece ginger (sliced)
- 1 onion (sliced)
- 1 cinnamon stick
- 3 star anise
- 2 cloves
- 2 tablespoons fish sauce
- Bean sprouts, fresh basil, coriander, and mint (to taste)
- Lime wedges
- Fresh chili peppers (sliced)
- Hoisin sauce and Sriracha (optional for serving)
Making the broth:
- In a large pot, heat the beef or chicken broth.
- Add the sliced ginger, onion, cinnamon stick, star anise, and cloves to the broth.
- Simmer the broth over low heat for 30-45 minutes to allow the flavors to meld.
- Strain the broth to remove the spices and vegetables, and season with fish sauce to taste.
Cooking the noodles:
- Cook the Bamboo Tree Rice Noodles 5 mm according to the package instructions, usually 4-5 minutes in boiling water, until they are tender but still slightly al dente.
- After cooking, rinse the noodles with cold water to stop the cooking process and drain well.
Serving:
- Place a portion of the cooked noodles in a large bowl.
- Top with the thinly sliced beef, chicken, or tofu.
- Pour the hot broth over the noodles and meat. The heat of the broth will lightly cook the meat.
- Add fresh bean sprouts, basil, coriander, and mint to taste.
