Good things don't always have to be complicated. For all those who can't get enough of indulgence with a clear conscience, we have developed our sous vide goose leg: gently confit in goose fat (cooked sous vide), it guarantees a perfect result: crispy on the outside, juicy on the inside – ready to serve in just 20 minutes
Juicy, firm-muscled and very flavorful meat, perfect fat deposits and great taste. MeineWeideGans is one of the best geese from Austria and that's no coincidence: keeping far above the organic standard, lots of exercise, even more sun and fresh air and of course pasture slaughter without live transport make it one of the best poultry you can buy. The geese are waxed after slaughter so that even the smallest feathers are removed.
Preparation in the oven:
1 - Preheat
Preheat the oven to 240° hot air. Also works in an oven with top and bottom heat.
2 - Warm up
Heat the vacuum bag in hot water for 5 minutes – best in the sink. Cut open the bag and remove the goose leg. Pat the goose leg dry with kitchen paper and season as desired.
3 - Roast
Place the goose leg on a baking sheet – skin side up. Roast in the oven on the middle rack at 240° for approx. 20-22 minutes until the skin is crispy. Depending on the oven, this can take a few minutes longer.
Let the goose leg rest for about 5 minutes with the oven door open (oven switched off).
