Mashed fermentation, far from grey, cloudy - but pure joy. An extraordinary interpretation of the Pinot gris and Pinot blanc varieties with the support of Neuburger and Chardonnay from slate and limestone sites. Gentle biodynamic cultivation.
Manual harvest from the end of August to mid-September, spontaneous fermentation, mostly left on the mash for two weeks, gently pressed with the basket press. Biological acid degradation, matured for 17 months in amphorae and in used large oak barrels on its own yeast.
