Emmi Tete de Moine Rosetten
The TÊTE DE MOINE is a Swiss hard cheese with a very fine and smooth texture. This cheese is not cut, but scraped into fine rosettes with a Girolle (a special cheese plane). Scraping increases the surface area of the cheese that comes into contact with the air. On the one hand, this changes the structure of the cheese dough and on the other hand, it allows the full development of the flavor.
The TÊTE DE MOINE has an aromatic flavor that becomes more pronounced with increasing maturity. The color of the dough varies from ivory to light yellow depending on the season.
