Morbidi Pecorino with white mold in the rind
Product description:
This is a Pecorino cheese made from pasteurized milk. During processing, Candidum pennicillum is added directly to the vat. The curd is broken into large pieces (like a walnut) to retain more moisture and obtain a creamier product. After about 15 days, when the first molds form on the surface, it is wrapped in paper. Complete ripening takes place after about 30/40 days. During ripening, the product becomes creamier and more flavorful. The reason for wrapping it in paper is to maintain the correct ripening of the mold. Soft cheese with a creamy and soft texture with white mold in the rind, sweet and delicate in taste.
Combinations that work:
-as an appetizer: It is recommended to enjoy it with light and fruity red wines, on a cutting board, accompanied by berry honey and cold cuts, or as a crostino.
Storage:
Store in a cool place at a temperature between +4 °C and +8 °C.
About the company:
It all began in 1925 in a small dairy in the old town of Siena. From then on, the name Morbidi became synonymous with ""good food"" for the locals. Over the years, the Morbidi family has always been able to innovate and take on challenges.
In the 1940s, we started working with pork, followed by sheep's milk, in keeping with the oldest local traditions. Over the generations, we have evolved into a modern company that focuses on sustainability and a short supply chain, but we have never forgotten where we started: in a wonderful place that still welcomes anyone who passes through the heart of Siena.
