Morbier PDO Fresh Pack
Ladies and gentlemen... this is a very interesting French cheese. Morbier, consisting of two layers, separated in the middle by a layer of neutral-tasting vegetable charcoal. In the past, this served to extend the shelf life of the product, but today it is added primarily to preserve tradition. The Morbier we offer you is a cheese with a certificate of protected designation of origin. The original Morbier cheese may only be produced in certain parts of the Franche-Comté region – in the departments of Doubs and Jura and in parts of the neighboring departments.
It is made from raw cow's milk. It matures for at least 45 days. During this time, the rind takes on a light gray to orange-beige color. Secondary mold may occur on it. The middle, apart from the aforementioned horizontal band of dark vegetable charcoal, is ivory to pale yellow. It also has a springy, creamy texture and a creamy taste and smell. The latter is reminiscent of the scent of fresh hay. Hmmm... sounds idyllic. It makes you want to sit down on a blanket and get the accessories that go well with Morbier out of a picnic basket, and by accessories we mean, for example, Savoy crêpes.
Tip:
Morbier is a semi-hard cheese and is therefore perfect for dishes that need to be baked briefly. It goes perfectly with dishes from its home country. With toast and the famous Croque Monsieur and Croque Madame. Croque Madame is prepared in the same way as Croque Monsieur, but... a fried egg is placed on top. It can also be used for dry cakes, either as a topping or with a béchamel sauce. And if you like cheese in combination with pasta, try Morbier as a spread on cannelloni.
