Schreckbauer Sepp's pig farming is very special. He mainly breeds pigs of the Duroc breed, as well as some Mangalitza or Iberico pigs. These native breeds have a higher proportion of essential fatty acids, which is further supported by plenty of space to run around, rooting and cooling-down options in the free-range system. The main focus is on achieving top marbling (intramuscular fat), which makes the meat tender and juicy. The animals on this farm enjoy genuine free-range keeping with opportunities to root around and cool down in the water. Stress-free slaughtering directly on the farm is extremely important to the breeder and master butcher Sepp Mayer. This is how he achieves the unique quality of his pork, which you can see, feel and of course taste.

About the producer:

Behind echt-Schreckbauer is master butcher Sepp Mayer and his organic farm Schreckgut ("Oberseidl") in Bischofshofen, Gainfeldtal.  Here – on a farm that is over 300 years old and at an altitude of approx. 1000m – he and his family breed organic cattle, organic sheep and free-range pigs. The farm butchery is also located directly on the farm. This was optimised and expanded in 2022. This now allows high-quality products to be created. "Sepp" is particularly proud of the new climate-controlled rooms and the maturing room for dry-ageing, in which choice cuts of organic beef and free-range pork are often matured for weeks to optimise flavour and tenderness.

Our animals live on our organic farm and enjoy a life in the great outdoors, which eliminates long transport routes and allows them to be slaughtered stress-free directly on the farm.
