There are countless types of sugar, and new exotic varieties are constantly being added. We are also delighted to welcome a new member to our sugar family, and it has travelled a long way: Panela!
This golden unrefined sugar from Colombia is made from sugar cane juice. Producing this full-bodied, molasses-flavoured sugar is quite simple. The sugar cane is harvested and then the sugar juice is pressed out of the cane using a sugar mill. The water is then evaporated and the mass is thickened into a syrup. This mass is then poured into a mould and hardens into a block. Panela is traditionally sold in this form and is primarily used to sweeten coffee and tea. However, before it arrives at your home, the block is pulverised, because this makes it ideal for refining your porridge, rice pudding and baking.
