The sea bass (Dicentrarchus labrax) is also called Loup de Mer and is one of the most sought-after edible fish. Typical for the appearance of this predatory fish are the black-marked gill covers and the serrated dorsal fin. Its home, besides the North Sea, is primarily the East Atlantic and the Mediterranean Sea.

Taste and preparation:
The white flesh of this noble fish is firm and tender at the same time and has a fine inherent aroma.
The sea bass is wonderful to prepare whole, whether on the grill or in the oven. It is also the classic fish for preparation in a salt crust. Simply mix coarse sea salt with a little water, cover the fish all around with it, and cook in the oven.
