The San Daniele raw ham is produced exclusively in Friuli-Venezia Giulia, in the hills of the province of Udine, in the far northeast of Italy. The combination of dry air from the Alps and warm, humid air from the Adriatic Sea creates a particularly favorable climate for the maturation of the hams.
In taste and appearance, it is similar to Parma ham. It is of a pinkish-brown color with a thin layer of fat, and the taste is aromatic and slightly sweet. Exclusively from the meat of pigs of the Large White, Lanrace and Duroc breeds, which were born and raised in Italy.
