Schrot & Korn Universal Flour Type 480 1kg
The remaining amount of ash determines the type number of a flour.
With type 480, 480 mg of ash remain from 100g of flour after the burn test.
The more of the whole grain is ground, i.e. the higher the extraction rate, the higher the type and the darker the color of the flour. The higher the type number, the higher the proportion of vitamins, minerals and fiber.
Light flours have a lower flour type number because the flour is only taken from the white inner flour body. This in turn means that the flour has a lower nutrient and fiber content.
