Boneless shank cut from the short rib of beef. Compared to shank from the plate (back rib), it has a higher meat content and is finely marbled with fat and connective tissue. It is perfect for a strong soup base or as a braising meat.
The meat from the Austrian AMA Gütesiegel certified young bull is an absolute all-rounder in the kitchen. The young cattle are allowed to grow to a maximum of 20 months and are therefore particularly tender and fine-fibred.
