Organic Duck Breast Fillet - fresh - Commercial Grade A - Vacuum-packed. 100% organic duck from Austria.

Duck meat is known for its excellent taste and is considered one of the lean meat varieties. It is also a source of magnesium and vitamin B1.

Our organic ducks come from Austrian parent flocks. The ducks are raised in species-appropriate conditions on organic farms in Upper and Lower Austria.

Preparation idea:

  • Score the duck breast fillet crosswise (diagonally) on the skin side with a sharp knife. Season with salt and (Sichuan) pepper.
  • Cut the spring onions into 1 cm pieces, cut the root vegetables in two steps, first into slices, then into fine strips.
  • Finely chop the 2 x 2 cm piece of ginger and the garlic clove.
  • Heat the sesame oil (peanut or spicy sunflower oil) strongly in a coated pan. Place the duck breast fillet skin-side down
  • fry for approx. six minutes until crispy. Once it has reached a medium brown, turn it over. Fry on the other side for approx. 3 to 4 minutes as well. 
  • Remove the pan from the heat, wrap the fillets in aluminum foil and keep warm in a preheated oven at 85 °C.
  • Place the pan back on the hot hob, add a little sesame oil, heat it, sauté the garlic and ginger, add the remaining vegetables and roast for a few minutes, stirring several times. 
  • Then add soy sauce, mirin and the ready-made product (wok sauce or sweet and sour chicken sauce) and bring to a boil once. 
  • Remove the duck fillets from the oven, pour the released meat juices from the foil over the vegetables, place the fillets on the vegetables, cover and simmer for about two more minutes.
  • Slice the duck breast fillet diagonally into fine slices and arrange on the wok vegetables. Basmati rice is an excellent accompaniment.
