The Jamon Gran Reserva from the ham manufacturer Redondo Iglesias< /strong> is made from the cock of the Iberico pig.is made from the leg of the Iberico pig. The whole leg is seasoned with sea salt and matured for 20 months, which is where it develops its incredible flavour and delicate texture.
The whole ham on the bone comes vacuum-packed with a wooden ham stretcher to lay the ham on and cut it into small pieces with the knife provided. Classically, a serrano ham is not cut into long thin slices, but into small slightly thicker pieces.
