The product is pre-matured, smoked with beech wood and post-matured in a suitable climate chamber. The necessary maturing time develops the typical pleasant raw sausage flavour, which is brought out in a very pleasant way by the traditional seasoning. Due to the strong drying out during the post-maturing period, the product is correspondingly durable and easy to store.
